Made from more milk than cream, super-smooth gelato has more intense flavours than traditional, fattier American-style ice creams, which are quickly churned, and therefore contain more air.
Gelato is delicately mixed at a significantly slower pace, resulting in more pleasure – and less air – from every delicious mouthful.
